Aloo Broccoli Fry is very quick to make and healthy subzi which is delicious with both rice and rotis. Previously i didn't liked to eat broccoli so i combined this with potatoes and it turned out very tasty. Now i eat broccoli regularly ....

Vankayi Vepudu | Brinjal Fry
Brinjal Fry is very simple and delicious fry with less ingredients which goes well with plain rice / rotis. Brinjal is popularly used in indian dishes as it has a different taste and texture which can be prepared in different types.

- Heat oil in a pan and add one by one, fry red chillies, urad dal, mustard seeds & curry leaves.
- Add the chopped onions & green chillies & fry until golden brown.
- Add the ginger garlic paste and fry for a min.
- Now add the chopped brinjals, turmeric, salt, red chilli pwd and mix well. Cover and cook for 5-10 min until the pieces become soft.
- Open the lid and fry for 5-10 min and remove it into a serving dish.
- Garnish with coriander leaves.
- Serve hot with rice or chappati's & enjoy the fry.

Okra Fry | Bendakaya Vepudu
Okra Fry is a popular side dish in south india which is crispy and delicious. I usually make this fry when i make sambar / rasam. Okra Fry is a great combination with any rasam.
I do two things to avoid okras becoming sticky.
After washing okras, drain the water and wipe them with a tissue or a cloth. Then chop the okras. So that while frying okras will not become sticky.
(OR)
Cut the okras before day and store them in a plastic box & refrigerate it. Next day u can fry them.

Beans Fry with Dry Coconut RedChilli Powder
Beans fry is very simple and easy to prepare that can be made very quickly. I add dry coconut redchilli powder which tastes great. Normally we use dry coconut redchilli powder for idlis and dosas. Once i tried adding this powder to some frys, it turned out very good. Very soon I will be posting the powder recipe.
