Carrot Halwa is one my favorite sweet from my childhood which i learnt from my mom. This is one of the popular traditional indian sweet especially made during festivals. Carrot Halwa is made with grated carrots cooked in milk and garnishes with nuts which is healthy and rich in Vitamin A .
Cooking Time 1-1 ½ hour

3 cups
|
Milk |
6 cups
|
Seasoning:
Cashews |
10
|
Almonds (grated) |
10
|
Elachi powder |
1 Tsp
|
Ghee |
3 Tbsps
|
- Peel the carrots & grate them. Fry the grated carrots on a pan for 5 min to avoid the raw smell of carrots.
- In a heavy bottomed pan boil milk for 10 - 15 min.
- Add grated carrots, sugar to the boiled milk and mix well.
- Boil them on a medium flame until the milk dries up. Stir constantly to prevent any sticking.
- When the mixture becomes thicker add elachi powder & turn off the heat.
- Fry cashews in ghee separately and add them to the mixture.
- Garnish with grated almonds.
- Can be stored at room temperature for 1 -2 days and then refrigerate for 1 week.
- Enjoy the delicious Gajar Ka Halwa !!!
