Chicken Dum Biryani is one of the authentic and popular dish from Hyderabad. Everyone from my family and friends love this biryani. To make this chicken biryani, marinate the chicken with spices and cook the rice and chicken on low flame so that rice gets the flavor from chicken.

Serves 2-3 Persons
Ingredients:
For Chicken Marination:
Chicken pieces with bones

Green chilles (sliced)

Lemon juice

For Cooking Rice (In Electric Rice Cooker):
Rice (Washed)
|
4 Cups
|
Water
|
5 ½ Cups
|
Cloves (Lavangaalu)
|
4 Cloves
|
Green Cardamom (Yaalukalu)

Cinnamon (Dalchina chekka)

Black Jeera/ Shahi Jeera

Star Anise (Anasapuvvu)

Lemom juice

For making Fried Onions:
Onion (finely sliced & deep fried)
|
1 big Onion
|
Oil
|
For Deep Frying
|
For cooking Chicken:
Onion (finely sliced)
|
½ Onion
|
Marinated Chicken
| |
Oil/Ghee
|
1 - 2 Tbsp
|
For Garnishing:
Orange Color (Dissolve in 4 Tsps water)
|
A Pinch
|
Saffron (Dissolve in 2 Tbsp warm milk)
|

- Put all the ingredients of the marination in a bowl and mix well.
- Cover the bowl and refrigerate for 1-2 hours or for a whole night if possible.
- Cook the rice in a rice cooker with cloves, cardamom, cinnamon, black jeera, star anise, mint leaves, coriander leaves, lemon juice, bay leaves, ghee, salt and water until half cooked.
- Mean while deep fry the sliced onions until golden brown color. Remove them onto an absorbent paper and keep them aside.
- Heat oil in a deep pan and fry the onions(for preparing chicken) until golden color.
- Add the marinated chicken pieces to the pan. Cover and cook for 10 - 15 min on medium flame.
- Now add some fried onions on the chicken and add some half cooked rice.
- Add again the fried onions on rice, sprinkle some saffron milk and some orange color water.
- Add the remaining rice and sprinkle saffron milk and orange color water.
- Close the pan tightly with an aluminium foil.
- Keep the pan on low flame for 30 min.
- After 30 min turn off the stove and wait for 5 min to open.
- Mix the rice with the chicken and serve with raita or mirchi ka salan or any gravy.
- Enjoy the Dum Biryani !!!
