Happy Sankrathi/Pongal to all my readers, friends and family !!!
Chakra Pongali is a traditional sweet from south india made especially for the festivals and pujas. Sweet Pongal is prepared from rice, moong dal , jaggery and garnished with cashews and raisins which is very delicious and simple to prepare.
Cooking Time 45 - 60 min
Serves 3 - 4 Persons

1 Cup

Moong Dal |
½ Cup

Water |
3 ½ - 4 Cups
|
Jaggery (Shredded) |
1 ¼ Cup
|
Elachi Powder |
½ Tsp
|
Ghee |
4 Tbsp
|
Coconut pieces (Grated) |
1 - 2 Tbsps
|
Cashews |
10 - 15
|
Raisins |
10
|
Process:
- Take a pan and fry Moong Dal in 1 tsp ghee until 2 min on medium flame.
- Wash rice and cook rice and moong dal with water in an electric rice cooker. (Can aslo use pressure cooker)
- After the rice is cooked, add the shredded jaggery and elachi powder and mix properly until the jaggery melts.
- Lastly in a different pan fry cashews and coconut pieces in ghee.
- Remove them from the pan & add this to the pongali.
- Enjoy the sweet pongal.
