Brinjal-Tomato Chutney is very delicious and spicy chutney which is made with brinjals, tomatoes, green chillies, tamarind and other spices. This chutney is a nice combination with rice / rotis.
For Seasoning:

Brinjals (round & purple color)(chopped) |

Cumin seeds (Jeera) |
½ Tsp

Garlic (minced) |
1 Clove

Turmeric |

To Taste

Coriander leaves (Chopped) |
For garnishing

Dried Red chillies |

Process:
- Heat oil in a pan, fry cumin seeds and wait until they splatter.
- Add the chopped brinjals, chopped tomato, chopped green chilles, turmeric & salt.
- Mix well and cover the pan & cook until they become soft. Remove from heat & let it cool.
- Grind the cooked brinjals, tomato, green chillies, tamarind pulp & garlic in a mixi or a food chopper.
- Remove the pachadi into a bowl and do the seasoning by heating oil in a pan fry minced garlic, red chilies, cumin, mustard seeds & curry leaves.
- Serve with hot rice or chapatis.
