I usually prepare this pulihora for the ugadi festival and also in summers which is very simple, delicious and easy to make. My daughter loves all kinds of pulihora - One of which is this mango rice which is made with fresh raw mangoes.

Rice (cook 2 cups rice with 1 ½ water) (each grain should be seperate) (preferably sona masoori rice) |

Grated Raw Mango (peel and grate) |
2 - 2 ½ Cups

Coriander Leaves (finely chopped) |

2 - 3 Tbsps

Cashews |
2 - 3 Tbsps

Channa Dal |
1 Tbsp
|
Urad Dal |
1 Tbsp

Mustard Seeds |
1 Tbsp

Dry Red Chillies |
4 - 5
|
Green chillies |
8 - 10
|
Curry Leaves |
10 - 15
|
Turmeric Pwd |
¼ Tsp
|
Ginger (Grated) |
1 Tsp
|
Process:
- Heat oil in a pan and fry peanuts for 1 - 2 min until light golden color. Then add cashews, channa dal, urad dal, mustard seeds and fry for another 1 min on medium flame.
- Now add green chillies, red chillies, ginger, Turmeric Pwd and curry leaves and fry for about 1 min on a low flame. Switch off and keep it aside.
- Spread the cooked rice in a wide pan, then sprinkle salt and add the seasoning and grated mango to the rice.
- Mix well with your hand or with a big spoon. Serve and enjoy !!!
- Generally i make this pulihora on the Ugadi Festival.
