Brinjal Fry is very simple and delicious fry with less ingredients which goes well with plain rice / rotis. Brinjal is popularly used in indian dishes as it has a different taste and texture which can be prepared in different types.

Red chilli pwd

Garam masala pwd

Turmeric

Cumin seeds (Jeera)

Curry Leaves

- Heat oil in a pan and add one by one, fry red chillies, urad dal, mustard seeds & curry leaves.
- Add the chopped onions & green chillies & fry until golden brown.
- Add the ginger garlic paste and fry for a min.
- Now add the chopped brinjals, turmeric, salt, red chilli pwd and mix well. Cover and cook for 5-10 min until the pieces become soft.
- Open the lid and fry for 5-10 min and remove it into a serving dish.
- Garnish with coriander leaves.
- Serve hot with rice or chappati's & enjoy the fry.
