Chicken Dum Biryani | Chicken Biryani

Chicken Dum Biryani is one of the authentic and popular dish from Hyderabad. Everyone from my family and friends love this biryani. To make this chicken biryani, marinate the chicken with spices and cook the rice and chicken on low flame so that rice gets the flavor from chicken.

Chicken Dum Biryani

Ingredients:

For Chicken Marination:
Chicken pieces with bones
1 whole chicken
Ginger Garlic paste
2 Tbsp
Yogurt
½ Cup
Mint leaves (chopped)
¼ Cup
Coriander leaves (chopped)
¼ Cup
Green chilles (sliced)

Corriander pwd
3 Tsp
Red chilli pwd
4 - 5 Tsp
Turmeric
1 Tsp
Garam Masala
2 Tsp
Lemon juice
2 Tsp
Salt
2 Tbsp

For Cooking Rice (In Electric Rice Cooker):
Rice (Washed)
4 Cups
Water
5 ½ Cups
Cloves (Lavangaalu)
4 Cloves
Green Cardamom (Yaalukalu)

Cinnamon (Dalchina chekka)
2 Inch
Black Jeera/ Shahi Jeera
½  Tsp
Star Anise (Anasapuvvu)
1
Mint leaves (chopped)
¼ Cup
Coriander leaves (chopped)
¼ Cup
Lemom juice
2 Tsps
Bay leaves
3
Ghee/Oil
1 Tbsp
Salt
4 Tsps
For making Fried Onions:
Onion (finely sliced & deep fried)
1 big Onion
Oil
For Deep Frying
For cooking Chicken:
Onion (finely sliced)
½ Onion
Marinated Chicken
Oil/Ghee
1 - 2 Tbsp
For Garnishing:
Orange Color (Dissolve in 4 Tsps water)
A Pinch
Saffron (Dissolve in 2 Tbsp warm milk)
A Pinch
Chicken Dum Biryani
Process:

  • Put all the ingredients of the marination in a bowl and mix well.
  • Cover the bowl and refrigerate for 1-2 hours or for a whole night if possible.
  • Cook the rice in a rice cooker with cloves, cardamom, cinnamon, black jeera, star anise, mint leaves, coriander leaves, lemon juice, bay leaves, ghee, salt and water until half cooked.
  • Mean while deep fry the sliced onions until golden brown color. Remove them onto an absorbent paper and keep them aside.
  • Heat oil in a deep pan and fry the onions(for preparing chicken) until golden color.
  • Add the marinated chicken pieces to the pan. Cover and cook for 10 - 15 min on medium flame.
  • Now add some fried onions on the chicken and add some half cooked rice.
  • Add again the fried onions on rice, sprinkle some saffron milk and some orange color water.
  • Add the remaining rice and sprinkle saffron milk and orange color water.
  • Close the pan tightly with an aluminium foil.
  • Keep the pan on low flame for 30 min.
  • After 30 min turn off the stove and wait for 5 min to open.
  • Mix the rice with the chicken and serve with raita or mirchi ka salan or any gravy.
  • Enjoy the Dum Biryani !!!
