Vankaya Tomato Pachadi | Brinjal Tomato Chutney

Brinjal-Tomato Chutney is very delicious and spicy chutney which is made with brinjals, tomatoes, green chillies, tamarind and other spices. This chutney is a nice combination with rice / rotis.

Serves 2 - 3 Persons

Ingredients:

Brinjals (round & purple color)(chopped)

Tomato (Chopped)
1 Small
Green chillies (Sliced)

Tamarind paste
¾ Tbsp
Cumin seeds (Jeera)
½ Tsp
Garlic (minced)
1 Clove
Turmeric
⅛ Tsp
Salt
To Taste
Coriander leaves (Chopped)
For garnishing
Oil
1 Tbsp
For Seasoning:
Dried Red chillies

1 Clove
Urad dal
½ Tsp
Cumin seeds (Jeera)
½  Tsp
Mustard seeds
½  Tsp
Curry Leaves
Few
Oil
1 Tbsp

Process:

  • Heat oil in a pan, fry cumin seeds and wait until they splatter.
  • Add the chopped brinjals, chopped tomato, chopped green chilles, turmeric & salt.
  • Mix well and cover the pan & cook until they become soft. Remove from heat & let it cool.
  • Grind the cooked brinjals, tomato, green chillies, tamarind pulp & garlic in a mixi or a food chopper.
  • Remove the pachadi into a bowl and do the seasoning by heating oil in a pan fry minced garlic, red chilies, cumin, mustard seeds & curry leaves.
  • Serve with hot rice or chapatis.
